Red Wine Vegetarian Pot Roast

When planning dinner with friends & not wanting to leave anyone out or make them have to bring their own meal I conjured up this recipe so we could all sit down with the same dish, break bread together & discuss the shit show of our daily lives.
INGREDIENTS:
1tsp olive oil
2 cloves garlic, minced
1 small red onion, chopped
8oz Baby Bella mushrooms, sliced
½tsp Cajun Seasonings, or Season Salt
A splash or 2 of soy sauce
½tsp tarragon
A pinch of Chinese five spice
1C red wine
12 baby carrots, quartered
2 stalks celery, halved & sliced
1 pound mini golden potatoes
1 pound italian vegetarian meatballs
1tsp rosemary
1tsp thyme
½tsp of black pepper
½tsp salt
1½TBSP spicy mustard
3¼ cup vegetable broth
1TBSP cornstarch
2tsp worcestershire sauce
Heaping cup of love
Always remember to cook from your heart for best results.
DIRECTIONS:
Cut up all of your vegetables, place garlic, onion, & mushrooms in a sauté pan. Then place celery & carrots into your insta-pot.
Add your potatoes, meatballs, Italian seasoning, black pepper, salt, mustard & vegetable broth as well to the insta-pot, stir & set to the side.

Add olive oil to sauté pan, along with Cajun Seasonings, soy sauce & tarragon. Sauté until mushrooms are tender.
Add red wine to sauté pan & reduce on low for 25 minutes or until wine is almost gone.

Add reduction to insta-pot ingredients & stir.
Seal insta-pot & cook pressurized for 20 minutes.
Allow pressure to release & drain liquid from insta-pot back to sauté pan, add 1C vegetable broth, worcestershire sauce & heat to a boil.
Make a cornstarch slurry with ¼C vegetable broth. Then whisk into boiling liquid to thicken as a gravy.
Cook down for several minutes then pour over ingredients in insta-pot & serve immediately.

TIPS:
Top with shredded Parmesan before serving.
Substitute the rosemary & thyme for 2tsp Italian seasoning.
Omit Chinese five spice if you do not like the flavor.
Substitute vegetable broth for beef broth & vegetarian meatballs with a 2 lbs roast or stew meat for meat option.
Use spices to your liking everyone is different.
Always cook from the heart & never be afraid to improvise if it feel right.
Will serve approximately 8.
Serve with warm bread & fresh butter.
